Grape varieties: 90 % Grenache 10 % Syrah.
Harvest: Hand harvest sorted on sorting table
Vinification: Following the harvest the grapes are sorted carefully then de-stemmed and crushed. Next they are cooled down to between 15 and 17°C. The pre-fermentation stage lasts for ten days allowing us to extract maximum aroma. The fermentation continues for another twenty-one days. Then de-vatting takes place at the end of the 31-day period. In winter we are able to maintain temperatures between 18 and 20°C thanks to our high tech wine making equipment.
Tasting Notes:The garnet robe is mouth-watering in itself, backed up with sun-ripened fruit and fudge aromas. The palate is a tasty morsel made up of luscious fruit and warm spices, giving a smooth, refined mouthful with elegant tannins.
It can be laid down for 5 years and more but can be drunk now.
